picture day




Yesterday was picture day at school. At the last minute I grabbed my camera and took a few pictures to capture what a handsome lil guy we have. You know the school picture will let me down! Part of taking a photography course is now I see my mistakes more clearly in the pictures I take but at least I'm learning.

monday: homemade chicken and rice soup (from the freezer) and BLT cups (I'll post the recipe) I need to bribe my family with something fun to eat with their soup
tuesday: sweet and sour pork (from the freezer)
wednesday: strogonoff meatballs (recipe on blog) and salad
thursday: grilled salmon, quinoa and roasted vegetables
friday: jambalaya, veggies and dip
saturday: harvest pork tenderloin (recipe on blog) brown rice and vegetables
sunday: Thanksgiving dinner in Canada!

random pics















I am trying to have a more organized approach to my pictures instead of just uploading to the computer never to be seen again. I upload monthly to Costco, pick up my pictures, put away in albums and try to scrapbook events from the previous month. Today I picked up September's pictures and managed to finished a page for each of the kids scrapbooks. I found some fun ones of Amelia I never shared.

apple oatmeal cookies

I tried this recipe yesterday trying to use up my very slowly dwindling bin of apples...

1 cup of flour
1 cup whole wheat flour
2 tsp cinnamon
1 tsp salt
1 tsp nutmeg
1 cup butter
1/2 cup white sugar
1/2 cup brown sugar
4 eggs
2 cups rolled oats
3 cups diced apples without peel

Preheat oven to 350 degrees

In a large bowl, cream together the butter and sugars. Beat in the eggs until well blended. Combine the flour, baking powder, cinnamon, nutmeg, and salt. Stir into sugar mixture until well blended. Fold in oats and apples. Drop by spoonfuls about 2 inches apart on ungreased cookie sheets

Bake for 15 minutes. Let cool on wire racks
