I modified a Real Simple recipe to what I had on hand and spiced up the broth a bit. It's pretty yummy.
8 cups/64 oz of vegetable or chicken broth
1 inch piece of fresh ginger thinly sliced
1 clove minced garlic
1 cup diced celery
1/4 cup diced red onion
1 tbsp sesame oil
2 tbsp oyster sauce
2 tbsp soy sauce
1 tsp chili pepper flakes
1 cup sliced carrots
2 cups fresh chopped spinach
combine in large pot on stove top and bring to boil, simmer for 10 minutes
then add
16 frozen potstickers
cook for another 10 minutes and you're done!

thai beef soup
2 32oz carton beef broth
2 garlic cloves minced
1 inch cubed ginger grated (I use a mini food processor)
1 bunch cilantro chopped
4 tbsp soy sauce
4 tbsp oyster sauce
1 tsp chili pepper flakes
1 tsp black pepper
1 steak thinly sliced
1 bunch green onions
Bring broth to boil, add garlic, ginger, cilantro, soy sauce and oyster sauce, pepper and chili pepper flakes. Simmer 10-20 minutes, cook thinly sliced beef in separate pan and add to soup, add sliced green onions. Serve over cooked noodles, and your choice of matchstick carrots, beans sprouts, sliced mushrooms, or snow peas.

black bean soup
I've been on a cooking kick lately, must be that fall weather!
2tsp olive oil
1 cup each chopped onion, chopped red pepper, and chopped carrots
1 clove garlic minced
3 cups beef or vegetable broth
1 cup tomato sauce
2 cans black beans, drained and rinsed
2 tbsp chopped cilantro
1 tbsp lemon juice and brown sugar
2 tsp oregano
1 tsp chili powder, ground cumin, and Worcesteshire sauce
1/2 tsp dried thyme and chili pepper flakes
1/4 tsp black pepper
Heat olive oil in large soup pot over medium heat. Add onions, red pepper, carrots, garlic. Cook and stir for 5 minutes, until vegetables begin to soften. Ad all remaining ingredients. Bring to a boil. Reduce heat to med low and simmer, covered, for 10 minutes.
Remove soup from heat,( I have a hand blender that I stick in the soup pot and puree everything ( transfer soup to a blender if you don't). Serve soup with a dollop of sour cream and chopped cilantro if desired.
