I need to get a wee bit more organized before the start of school. More thoughtful meals and a well stocked pantry are a start...as well as some inspiration from Pinterest. I'll keep you posted if anything is worth repeating!

meal plan frame
I realized this week I need to have our meals for the week displayed prominently . I had made dinner before going to work on Monday and thought Dale would see the giant casserole in the fridge for dinner. But if you don't look in the fridge you don't know that dinner is made and you take the kids to the Shrimp Shack for dinner. I'm hoping this will be hard to miss... I just need to pick up a black dry erase marker this week end and fill in the blanks.

I stopped using the catered meal company in February before my knee surgery. It had been definitely been convenient but I started to want to cook our own meals again and the kids weren't liking the majority of the meals. Also I was starting to see the effects of their high calorie meals... So I am trying to start meal planning again. I will just have 4 meals planned and not assigned to a particular night.

meal planning with a twist.
I like to cook but I found every week was a scramble to have food bought and prepared for the family (I work every Monday and Tuesday evening). In December I went to a fun cooking class put on by a local catering company. The theme was appetizers and martinis which was very fun but the best part is I learned they prepare and deliver dinners right to your doorstep weekly! The cost for 4 family dinners with leftovers for 1 person for lunch seems to run btwn $60-75 week delivered to my doorstep. My family has enjoyed all the meals and I have decided the price is worth it for us. The time I have saved from having to plan, shop, preapare and clean up meal prep has made the cost worth it.
