seattle science center: star wars edition


















We wanted to see the Star Wars exhibit before it left Seattle next week. (We is a generous term) Dale and the kids really wanted to the Star Wars exhibit. The kids had a fun time building a lego hovercraft and assembling robots and sitting in the cockpit of the Millenium Falcon!

happy birthday sweet Linden!













Saturday we celebrated Linden's first birthday! What a reason to celebrate one year later he is one of the roli-poliest, cutest, sweetest most adorable babies I know. Born at 27 weeks and under three pounds he is now at least 20 pounds heavier it's amazing what God, modern medicine and lots and lots of love can do! In typical first birthday fashion he missed his nap and was a lil fussy but Linden still did great, enjoying his first taste of choclate cake and unwrapping his presents.

jicama salad

I tried this recipe a few weeks ago when I had bought a jicama and wasn't sure what to do with it.
It tasted better the next day and it will definitely be an addition to my summer salad line up!


1 large jicama, julienned

2 large carrots, julienne

1 cup red onion, finely sliced (I didn't have any)

1/2 red pepper, julienned

1/2 yellow pepper, julienned

1 tomato, julienned

1/2 english cucumber, chopped

1/4 cup fresh lime juice

1/4 cup red wine vinegar

1 teaspoon honey

2 tablespoons olive oil

Pinch of cayenne

Salt and freshly ground pepper

2 tablespoons chopped cilantro

Directions

Combine jicama, carrots, red onion, both peppers, tomato in a medium bowl. Whisk together the lime juice, vinegar, honey, olive oil and cayenne and season with salt and pepper to taste. Add the cilantro and let sit for 30 minutes

easter 2011





Easter week end flew by and I only snapped a few pics. We went to church with the kids decked in their Easter finest (didn't take a picture) and then Amelia wiped out and ruined her new dress ( not so smart Mom bought a silk dress for a four year old - live and learn). We headed to Canada and had a short and sweet visit with my Grandpa and then onto my sister's for dinner.

We had 15 yards of dirt delivered to our front yard yesterday. Aiden wasting no time helping us compact it!
